Green Thumb Sunday - Dandelion

Taken in a restaurant by the title name, in Winnipeg.

The “weed” that will haunt many a gardener this year. Remember, if you catch them young, and unsprayed, you can eat their delectable little green leaves in salad. Their yellow heads can be carefully picked for wine making.

    Old timers will tell you that during the Dirty Thirties people couldn’t afford coffee beans. As a replacement, they dug up dandelion roots, cleaned them off and then roasted them on a cookie sheet in the oven. They then ground up the roasted roots and mixed it with chicory to make a coffee replacement. They perked this concoction in their old style percolaters and claimed that it tasted almost the same as a cup of brewed coffee.

    I knew you could make wine with it but I did not know that you could eat the leaves.

    I had forgotten the root was edible too, but I’ve heard about the root tea idea. Thanks for the reminder.
